When hashing out the recession winners and losers in the restaurant industry, you can make  some easy generalizations. Quick-serve restaurants and some fast-casual players did well, while casual chains and formal dining suffered.

Or, as Darren Tristano, executive vice president of Technomic Inc., Chicago, puts it: “Anyone with a check average of $3 to $12 is probably doing OK.

“But when you hit that $12 mark, which is casual dining, that’s when you start to see a drop-off.”
