From grilled street corn to chicken tacos, convenience-store retailers might want to leverage Cinco de Mayo as the start of a summertime foodservice celebration.

A Double Decker Tostada with Onion and Bean Dips (pictured), for example, is a vegan-friendly recipe beginning with a “ground plant-based meat blend spiced with taco seasoning,” writes CSP sister publication Foodservice Director. “To keep it plant-based, use vegan cheese, sour cream and mayo instead of the dairy versions.”
